WHere is an easy take on a beverage from our latest menu. Designed as a batch premix that is bursting with the flavours of a festive period, rendering it excellent for hosting a festive gathering. Any leftover citrus syrup for morning drinks, sweets, or to make additional servings of bikinis.
Bikini Recipe
Makes enough for 10 servings
To make the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Drink (makes 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Place every items inside a saucepan, bring to a simmer, agitating to dissolve. After that, take off the heat and leave to reach room temperature completely. Pour into an clean bottle, seal and store in the fridge, where it will keep for about four weeks.
For the Batch Mix: Pour all the liquid ingredients into one big jug, let it rest for an hour, then filter it best through muslin, making it perfectly clear.
When ready to serve: Pour 85ml of the premix into your mixing glass containing ice, and agitate carefully for about 60 seconds to cool it down. Pour to a chilled martini glass or similar, garnish with some cranberries and finish with a light spray of mandarin oil above the glass.
